Our next recipe is an easy rice and chicken dinner that you can make in just one pan.
Here is how to make it!
Easy One Pot Chicken and Rice Recipe
Easy Chicken Dinner
Equipment:
- Large Pan with Lid
- 1 medium bowl
- 1 small bowl

Servings:
- 6 servings
Ingredients:
- 1 cup uncooked basmati rice
- 2 tbsp Olive oil
- 6 chicken thighs
- 2 tsp Smoked paprika
- 1 ½ tsp Italian Seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 cup onion, chopped
- 1 tbsp butter
- 3 cups low-sodium chicken stock
- Salt and pepper (to taste)
Instructions:
Rinse Rice for Chicken and Rice
To get started on this recipe, you will want to rinse your rice.
Run water through the rice until the water running through is clear and then set the rice aside.
One Pot Chicken and Rice Ingredients
In a small bowl you will want to add the following seasonings for this chicken and rice recipe.
- Smoked paprika,
- Italian seasoning
- Garlic powder
- Onion powder
- Salt and black pepper if desired
Mix the seasonings to combine, and then set aside one teaspoon of the seasonings that you will use in a little bit.
Add the Seasonings to Chicken and Rice
Add the chicken thighs to a bowl and add the rest of the seasonings (minus that teaspoon).
Heat the olive oil in a skillet on medium to high heat.
While the oil is heating, mix the chicken and the seasonings until it is well-coated.
Sear Chicken for Chicken and Rice
Once the oil is hot, you want to carefully add the chicken to the oil and sear for about 3 minutes on each side until the chicken is golden brown.
Remove the chicken and place it on a plate. Set it aside, you will use it in a few minutes.
Add the Butter and the Onions to Chicken and Rice Recipe
Keep the heat on the skillet. You will then want to add the butter and the chopped onions.
Heat the Onions
Heat them in the hot oil mix until the onions are soft and translucent.
Add the Rice
Add the rice that you rinsed to the skillet, as well as the spoonful of seasonings that you saved.
Mix in Rice
Mix well and cook for a minute or two, stirring well to make sure that it doesn’t stick to the bottom of the pan.
Add Chicken Broth
Add the chicken stock over the rice.
Add Broth to Rice
Stir making sure nothing is sticking to the bottom of the pan.
If you want to, you can taste the chicken and rice recipe mixture at this point to see if you want to add any additional seasoning.
Add Chicken
Add the chicken thighs back to the pan and cover with a lid.
Cook Chicken and Rice
Cook on medium for about 15-20 mins, or until the rice is tender and fluffy.
Cooked Chicken and Rice
Be careful not to over cook.
