Karielyn's Expert Tips + Ingredient Substitutions

Here are some of my expert tips to make this recipe perfectly:

Hazelnuts: This can be substituted with another nut such as almonds, walnuts, or even cashews.

Cacao Powder: You can substitute with regular cocoa powder in the same amount.

Goji Berries: If you don't have or can't find goji berries, you could substitute with dried cranberries.

Coconut Oil: If you don't like the taste or smell of coconut oil, use organic refined coconut oil which has zero coconut taste and smell.

Maca Powder: I added this ingredient to increase the nutritional profile, but it can be omitted if you prefer.

Goji Berry Topping: A food processor can work if you don't have a coffee grinder, but I found they didn't really come out uniformly ground. Using a coffee grinder will give the goji berries a powder-type consistency which makes it easier to roll the truffles in and stick to them better.

However, if you don't have a coffee grinder or appliance to grind the goji berries into a powder, you can omit the topping or use one of these options to roll the truffles in:

  • Cacao Powder
  • Beet Powder
  • Shredded Coconut Flakes
  • Crushed Hazelnuts

Ingredients

For the truffles:

  • 1 cup organic raw hazelnuts
  • 1 cup organic Medjool dates (pitted)
  • 1/4 cup organic raw cacao powder
  • 1/4 cup organic goji berries
  • 2 tablespoons organic coconut oil
  • 1/2 tablespoon organic maca powder

For the topping:

  • 2 tablespoons organic goji berries (ground into powder)

Instructions

  • Prepare a cookie sheet lined with parchment paper, then set aside.

Prepare the topping:

  • Add the goji berries for the topping to a coffee grinder (or food processor) and grind until they have a powder consistency, transfer to a small bowl, then set aside.

Prepare the truffles:

  • Add all ingredients for the truffles to a food processor and process until they are well combined and have a wet, sticky texture.

  • Take out about a tablespoon at a time and roll into a ball shape in the palm of your hand.

Assembly:

  • Take each truffle and roll into the crushed goji berry powder making sure they are completely covered, then place on the prepared cookie sheet.

  • Transfer the cookie sheet to the refrigerator for approximately 30 minutes, or until they are a little firmer.

  • Store in an air-tight BPA-free container in the refrigerator until ready to serve because they will become soft and lose their shape if left out at room temperature.

Recipe Notes
